I love cocktails with tequila, but I have to admit sometimes I get tired of just having margaritas or a tequila and soda. I have been in search of a new tequila drink. Then I remembered a drink called the “Eveleigh Lemonade”, which is basically a margarita with lemon and honey instead of lime and agave nectar.
I first was introduced to this cocktail at it’s namesake restaurant The Eveleigh in West Hollywood, CA in 2012. I’ve been in search of the recipe for this drink ever since and I finally found it on the Imbibe Magazine site. What makes this drink interesting and different is the chamomile and lemon infused tequila and the use of the aperitif Cocchi Americano. So, what exactly is Cocchi Americano? Well, according to Wikipedia:
“Cocchi Americano is a quinine-laced aperitif wine produced by Giulio Cocchi Spumanti in the Asti province of Italy. Cocchi Americano is a variety of Americano. The wine was developed by Giulio Cocchi, and production began in 1891.”

Eveleigh Lemonade

Servings 1
Ingredients
- 1 oz. chamomile-infused tequila
- 1/2 oz. Cocchi Americano
- 1/2 oz. triple sec
- 3/4 oz. fresh lemon juice
- 1/4 oz. honey
- Tools: shaker strainer
Instructions
- For the infused tequila, combine 6 oz. of dried chamomile, the peel of 1 lemon (no white pith) and 1 liter of blanco tequila. Steep for 3 hours, strain and bottle.
- Shake ingredients with ice. Strain over ice and garnish.
- Garnish: lemon wheel
