Walkers Shortbread Interview from the Natural Products Expo West

I don’t know about you, but for me Walkers Shortbread is synonymous with shortbread cookies. My mom would occasionally have them in the pantry and what a treat.  I was very sad that I couldn’t eat them anymore when I became gluten-free. Well not anymore….in my latest interview from the Natural Products Expo West, I interview Lisa Sherman of Walkers Shortbread and she introduces me to their new gluten-free shortbread cookies, which come in three different flavors. I’m a classic girl so I love the Classic Shortbread cookie but the Ginger Lemon and Chocolate Chip Shortbread are also amazing. Natural Products Expo West Update

Last week was the Natural Products Expo West.  It was a huge event one of the largest conferences I’ve ever been to. I was only able to go for one day and I certainly couldn’t see it all. But I did manage to grab some amazing interviews with some great innovative companies in the gluten free world like Udi’s, Bob’s Red Mill, Vans and Food Should Taste Good. I have about 8 to 10 interviews to edit so I will be unveiling them over the next 2-3 weeks.

Here are some of the great items that I was given.  They should be on your store’s shelves in the coming months, if they aren’t there already….except the scarf, that’s mine. 😉

Gluten free almond blueberry pancakes, gluten free avenger

Gluten Free Almond Blueberry Pancakes

Everyone that knows me knows that I LOVE breakfast.  I always have.  I like to start my day off right by eating something healthy and yummy.   These are my favorite gluten free pancakes.  I think it’s because they have my two weaknesses….almonds and blueberries.  They’re light, fluffy, and oh so full of flavor!  I hope you like them too!

  • 2 eggs
  • 1 teaspoon vanilla
  • ½ teaspoon almond extract
  • 2/3 cup milk or unsweetened almond milk
  • 1/2 tablespoon sugar
  • 2/3 cup all purpose gluten free flour
  • 1 cup almond meal
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 4 ounces small fresh blueberries
  • Butter or cooking spray for pan/ griddle, more for pancakes
  • Maple syrup for pancakes


  1. In a medium size mixing bowl, whisk together the eggs, vanilla, almond extract, almond milk, and sugar until combined.
  2. Fold in the flour, almond meal, baking powder, and salt. Mix until combined.
  3. Set a large non-stick or cast iron skillet over medium heat. If not using non-stick pan, add a small pat of butter or cooking spray to lightly coat pan.
